We delicately slow cook a whole side of salmon in a court bouillon of fish stock, white wine, and aromatic herbs such as fennel and thyme allowing the salmon to absorb the rich flavours of the poaching liquid. After cooking the salmon is left to cool in its poaching liquor overnight, preserving it's incredible moisture and succulence. Served with our creamy herb and lemon dressing. The result is a sumptuous and perfectly cooked salmon, ready to grace your table.
