The art of food preservation was a necessity for our ancestors. Food by its nature begins to spoil the moment it is harvested. Food preservation enabled ancient man to make roots and live in one place and form a community. He/she no longer had to consume the kill or harvest immediately, but could preserve some for later use. Each culture preserved their local food sources using the same basic methods of food preservation. These included: curing, drying, pickling and canning. Due to refrigeration these techniques are no longer required but persist due to their unique ability to alter and enhance the flavour and texture of the food.

Our traditional way of preparing seafood flies in the face of modern production because we rely on real people taking their time and using age-old skills rather than cutting corners with rows of machines. Although this way is more time consuming and labour intensive, the end result surpasses all expectations.
